Ackee & Saltfish

  • 1 can Stone ackee in salt water, drained

  • 1 bell pepper

  • 1 scotch bonnet pepper, chopped

  • 1 onion, chopped

  • 1 tomato, chopped

  • 1 tablespoon Vegetable Oil

  • 2 Spring onions, chopped

  • 250g saltfish

  • 2 cloves garlic, chopped

Directions

  1. Put saltfish to soak in cold water for about 1 hour.

  2. Pour off cold water; add fresh water and cook until tender.

  3. De-bone and flake saltfish.

  4. Heat Vegetable Oil and saute onion, garlic, spring onions, tomato, scotch bonnet pepper and bell pepper. 

  5. Add flaked saltfish; Stone Ackee and add Salt and Black pepper to taste.

  6. Take care to toss lightly; cover and allow to stand over low heat for about 2 minutes.
