Callaloo (Vegan friendly)

  • 1 can Stone Callaloo

  • 1 tablespoon oil

  • 1 Onion chopped

  • 2 Cloves Garlic, chopped

  • 2 sprigs thyme

  • 1 tomato, chopped

  • 1 Scotch Bonnet pepper (whole)

  • 2 tablespoons water

Directions

  1. Place callaloo in a bowl, rinse with water and drain. 

  2. Place oil in a large pot, add onion, garlic, thyme, tomato, and scotch bonnet pepper on medium heat and saute.

  3. Add callaloo and water, allow to simmer on low heat for 5-10 minutes or until tender, season to taste.
